Epic Caramel Cornflake Brownie Cake Layer Cake!

If you've been following us for a little while, you'll remember when we first put the Caramel Cornflake Brownie on the counter, after the awesome guys at Sorted Food featured it on a video, it became an Internet sensation, since then it's been one our best selling products in our Soho bakery to date. It's available on our counter 7 days a week. We decided to rebirth it into a layer cake recipe. Enjoy!

CARAMEL CORNFLAKES
150g Double Cream
1⁄2 tsp Vanilla Extract
1⁄4 tsp Sea Salt
225g Caster Sugar
75g Butter, Cold and Chopped
95g Plain Cornflakes

SPONGE
650g Plain Flour
690g Caster Sugar
120g Cocoa Powder
2 tsp Bicarb
1 tsp Sea Salt
450g Coffee, Cooled
450g Buttermilk
390g Vegetable Oil
6 Eggs
4x 8” Round Cake Tins

SALTED CARAMEL
350g Double Cream
1 tsp Vanilla Extract
1 tsp Sea Salt
350g Caster Sugar
150g Water

BUTTERCREAM
400g Unsalted Butter
640g Icing Sugar
Half of the Salted Caramel

MALTY CORNFLAKES
15g Malted Milk Powder, such as Horlicks
15g Caster Sugar
Pinch of Sea Salt
40g Melted Butter
60g Cornflakes
