Hot Cross Bun Rolls
Easter weekend is nearing closer and closer, and Jemma is back with a recipe that combines the two worlds of Hot Cross Buns and Cinnamon Rolls, to create, Hot Cross Bun Rolls. Packed full of spiced butteriness, juicy fruits and a beautiful tear and share dough, these are the ideal Easter Weekend bake.
HOT CROSS ROLLS
345g Strong white bread flour
1 ½ tsp Mixed spice
½ tsp Cinnamon
60g Caster sugar
1 tsp Sea salt
7g Instant/easy yeast (1 ½ tsp)
120g Water
60g Whole milk
45g Unsalted butter
1 Egg
175g Mixed Dried Fruit
FILLING
70g Soft unsalted butter
2 tsp Cinnamon
1 tsp Mixed spice
60g Light soft brown sugar
GLAZE
50-75g Apricot jam, warmed
CREAM CHEESE ICING
55g Cream cheese (room temp)
15g Soft unsalted butter
½ tsp Vanilla extract
pinch Sea salt
125g Icing sugar, sifted
