Caramel Cornflake NY Cookie

This one's a project - but oh, is it worth it. A deeply dark chocolate cookie hiding a chunk of homemade caramel cornflake in the middle, then rolled in malty Horlicks cornflakes on the outside. Crunchy, gooey, chocolatey and totally over the top. In the best possible way.
