Rainbow Cupcakes


Remember 10 years ago when everyone, and we mean EVERYONE was on a Rainbow anything craze?! Well, we're giving a nod to our infamous Rainbow Cupcake video but we've made it even better. A new and improved sponge and a clever way of incorporating all of those colours into the icing.

SPONGE
240g Self Raising Flour
1⁄8 tsp Bicarb
3⁄4 tsp Sea Salt
200g Caster Sugar
110g Vegetable Oil
145g Milk
2 Eggs
1 tsp Vanilla
Rainbow Food Colours

BUTTERCREAM
285g Soft Butter
1⁄4 tsp Sea Salt
450g Icing Sugar
1⁄2 tsp Vanilla
1 1⁄2 to 2 tbsp Milk
Rainbow Food Colours
